My favourite meal of the day: BREAKFAST!

I love, love, LOVE this protein zoats recipe, I have it nearly every day! It’s such a simple recipe and it’s SO delicious you can’t really go wrong. Zoats is simply porridge with grated courgette in it. Do not, I repeat, DO NOT be freaked out by this. Everyone I have made this for has LOVED it, so please just give it a go! It’s a great way to get some extra nutrients into your breakfast and it can be a lower carb option if you don’t fancy a big bowl of oats. There are lots of different ways to make it, but my version is below:

Zoats topped with granola, berries, bee pollen and almond butter

INGREDIENTS

  • 70g oats
  • 1/2 grated courgette
  • 1 scoop protein powder – currently using MissFits Nutrition (vanilla)
  • 1/4 tsp cinnamon
  • almond/brown rice milk
  • Toppings

METHOD 

Add your oats, grated courgette, cinnamon and protein powder to your bowl or saucepan. If you have the time, I would recommend cooking this on the hob – it’s more smooth and creamy this way! Add some boiling water to cover the mixture and let it soak for a few minutes. Top up with your almond/brown rice milk (whichever you prefer) and give it a really good stir. If cooking on the hob, stir regularly and cook for 2/3 mins until lightly bubbling. You can add more milk if you prefer a creamier texture – don’t be afraid to add more/less! If you’re cooking in the microwave, cook on high for 1 min and stir, do another 30 seconds and stir, and finish with a final 30 secs and you’re done – just keep an eye on this as it can bubble over if you have a small bowl! Then all that’s left is to top with your favourite extras – my favourites would be banana, berries, homemade granola and almond butter. You can literally choose whatever you fancy!
