The Best Cookies

I think the name says it all here. If you do one thing today, BAKE THESE COOKIES. They are the ultimate healthy treat and super fast to make! They are also totally refined sugar free. I’ve made these a couple of times, once with chocolate chips and once with raisins.. both are great!

Made and drizzled with dark chocolate

INGREDIENTS

  • 100g ground almonds
  • 60g rolled oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 3 tbsp melted coconut oil
  • 2 tbsp honey
  • 1 egg
  • 50g raisins or chopped dark chocolate

METHOD

Pre-heat the oven to fan 170C. Add all the dry ingredients into a large mixing bowl and combine. Melt the coconut oil in a pan and add to the mixture. Add the honey, egg and vanilla extract. Mix together with a wooden spoon and add the raisins or chocolate Рif using chocolate, I would usually use minimum 90% chopped up. Use your hands to make small mounds of mixture and pop these onto a flat baking sheet lined with greaseproof paper. This mixture made 9 small cookies. Cook for 10-12 minutes in the oven, or until nicely brown. They will be a little squishy when you take them out of the oven, so put them onto a cooling rack to set. Once cooled, drizzle with chocolate or have plain and enjoy!
